This rich and deeply coloured estate grown Cabernet Sauvignon has all the classic characteristics from Eden Valley, subtle vanilla and cassis, with floral aromas, eucalypt, and a long, lingering finish. Given a generous 36 months on aged French oak to soften and develop, we've done the hard work for you to enjoy the wine now.
This cabernet was dry grown on our estate in a little low yielding, single vineyard within the rolling hills of Eden Valley. An east facing slope provides some respite from the harsh afternoon sun and our old river red gums surrounding the vineyard impart hints of eucalypt to the wine.
Our vineyard gets hand-on attention that would be uneconmical for those counting labour hours, but this is a place where Bec and I find peace. From careful pruning, to canopy management throughout the season, regular petiole and soil testing, to regular compost and straw additions, this Cabernet recieved just the right amount of light & nutrients to ensure a quality result.
After patiently waiting for Eden Valley's late ripening period, the grapes were hand picked, before gentle crushing and destemming, 9 days on-skins. Our methods included a brief temperature increase to 28C on day 3 followed by cooling to avoid harsh seed extraction and hand plunging peaking at 3 times a day during days 4&5. The wine was then pressed using our little basket press and tasted throughout to ensure good balance before aging for 36 months in aged French oak.
The 36 months on French oak,has given plenty of time for this full bodied wine to soften and develop complexity. This wine delivers subtle vanillas and cassis, maintaining some floral aromas and eucalypt influences.
We love the majestic old river red gums nestled throughout our Eden Valley estate, and the great hollowed out gum depicted on the label is our favourite. This magnificent timeworn tree has witnessed hundreds of years of history and provided accommodation for both native fauna and long-distant families alike.
